Hello Food Nanny Members!

My my my…how quickly the weather changes around here. Seems like we were just in shorts and t-shirts and now we are back to the cold. I hear it’s supposed to be a bad winter. Who knows around here. If you sit and listen to my round of coffee drinkers in the morning, which are mostly farmers, they’ll sit and tell me that it’s going to be bad winter. I told them that they told me that last year and they were wrong. They just smile. I just smile back.  Time will tell. Let’s get on with your meals….

Meal A

Mixed Greens
Potato and Collard Green Soup

potatoes, collards, turnips, onion, celery, garlic, sea salt, pepper, veggie stock and olive oil

Pretzel Roll

sugar, salt, water, flour, butter and charcoal sea salt

Pear Apple Crisp

pears, apples, sugar, vanilla, orange and lemon juice, orange and lemon zest, flour, butter, cinnamon, brown sugar, oats

Meal B

Lemon Chicken or Stuffed Portobello Mushroom with Moroccan Cous Cous and Mixed Veggies

The chicken was seasoned with lemons, parsley, thyme, sea salt, pepper basil and garlic.  We seared it on the flat top and then finished it in the oven.  The mushrooms are stuffed with bread crumbs, mushroom stems, spinach, onion, parsley, smoked gouda cheese, parmesan cheese and veggie stock.  The Moroccan Cous Cous is made with cous cous, turmeric, cayenne, seal salt, pepper, cinnamon, cloves, coriander, ginger, veggie stock and olive oil.  The vegetables were roasted with sea salt, pepper, garlic and olive oil
